Pearled means that a thin external layer of bran is removed from the emmer wheat. It is cooked in 25/30 minutes without being soaked and it does not need to be washed if it is clean. One can follow the traditional recipe widely used in the Garfagnana and Lucchesia area.


Pearled emmer wheat is ideal for the summer, especially in salads.


Casino di Caprafico has produced artisanal pasta since the 1990s, using less cultivated cereals and in particular ancient ones like farro (Emmer Wheat) and orzo mondo (Hulled Barley).

The resulting whole-grain products are particularly nutritious and can be enjoyed by those suffering from minor gluten intolerances.

In addition to producing both short and long pasta shapes, Casino di Caprafico also sells farro flour, roasted orzo mondo powder for caffè d’orzo (barley coffee) and herbal teas, whole-grain cereals and legumes for tasty soups, as well as extra virgin olive oil.



The Casino di Caprafico farm covers an area of 130 hectares, 70 of which are planted with cereals, legumes and olive trees. Since the beginning, the farm’s focus has been to
improve local agricultural products and develop cultivation techniques that respect both the products and the ecosystem. The uncontaminated land is ideal place for cultivating ancient grains without the use of pesticides and other synthetic chemical products. Since the ‘90s, the Casino di Caprafico has followed organic farming practices and continues to do so today, even if hasn’t requested official certification since 2016.
